Shortcrust pastry

Shortcrust pastry is the most versatile pastry to have in your locker, simple to make and can be used to make many different foods. My recipe is the one I used in my diner and gives a nice short pastry with tons of taste and texture.

Basic Short Crust Pastry

  • 300 gr all-purpose flour
  • 1 tsp salt
  • 50 gr Lard
  • 100 gr Margarine
  1. In a food processor add the Flour, and Salt and whiz for 30 seconds to mix it up, then while running add all the fats in chunks, when all mixed and breadcrumb like add the water till the dough clumps and starts to form a ball. Take out of your processor wrap in cling film and pop into the fridge for at least 2 hours before you make your pies.

This is the basic short crust pastry I use for my Pies and Pattys, the lard gives the pastry a nice texture and taste, if you cant find lard you can substitute with shortening, it is important to leave in the fridge for a least an hour for it to rest, I usually leave it overnight so its all ready to use in the morning. If you making Jamaican Pattys add a teaspoon of Turmaric for a bit of colour.
