Potato and Pea Curry

Tasty Potato Curry, take Potato and par boil meanwhile slice onions and fry in coconut oil on a medium heat til nice and browned, once ready add the potato and fry until browned. In a separate pan a wok is best, fry a teaspoon each of mustard seeds, cumin seeds, coriander seeds and fennel seed for about a minute in half a cup of coconut oil. Add the potato mixture and a tin of tomatoes. Add a small tin of peas and simmer for 40 mins. The curry needs to be moist but not runny in the last 10 mins add a tablespoon of Garam Masala. You can serve it with Rice or Flatbreads or as a side dish with your Curry
