Dukunu

Dukunu are tasty snack from Belize in Central America basically they are Mash Up Sweet Corn mixed with Coconut Milk and Butter  served plain or filled with a spicy filling of Pork, Chicken or Beans. one of the first things I look for when visiting Belize.

A tasty corn snack

  • 4 Tins Sweet Corn
  • 1 Tin Coconut Milk
  • 1 tsp salt
  • 1 tsp Ground Black Pepper
  • 1 tsp Baking Powder
  • .5 cup melted butter
  • 6 cup Maize Meal
  • 20 each Corn Husks
  1. Drain then empty the corn into a food processor and blitz until a nice paste is formed, then add the rest of the ingredients and mix well. Form into a sausage shape wrap in Corn Husk then cover tightly with foil. Steam the Dukunu for around 90 mins till firm.

This a recipe for plain Dukunu its easy to stuff them with some nice spicy Chicken or Pork. 

Just spread the corn out over the husk put a tablespoon of filling then wrap up the same way.
