
Who doesn’t like a nice slice of bread fresh out of the oven slavered with butter yummy. In Mexico they sell a buttermilk loaf it is soft and sweet very nice, but for us living in Belize City the trip to Chetumal in Mexico is a long and tedious journey about 90 mins drive then through two sets of customs and border control in and out, changing your Belize dollars for pesos, its all a performance, so unless you have another reason to do this journey it is best to make your own. I have tried several recipes and this is the best I have come up with so far.
It is fairly easy to do, I use a food processor because I am a bit lazy when it comes to kneading but it seems to work fine.
Buttermilk Bread

Sweet and soft very tasty bread
- 3 cups all-purpose flour
- 1 cups Buttermilk
- 1 tsp salt
- 1 tbsp sugar
- .25 cups vegetable oil
pop buttermilk into micro wave for about 60 seconds to warm, put all dry ingredients into food processor, and bltz for 30 seconds, add oil to butter milk then slowly pour down shoot into the dry, as soon as a ball of dough is formed stop pouring, spin for another 20 seconds to knead. take out dough and on a lightley floured surface roll into a nice ball, oil up a large mixing bowl and place in the dough cover and leave in a warm place for an hour and a half, when the dough has doubled in size punch down and form into an oblong put into a greased 2 pound bread tin and leave for another 40 mins. brush top with some milk, heat oven to 350 and place in the middle shelf and bake for about 40 mins till top is nice and brown, remove from oven take out of tin and tap the bottom if you get a hollow sound then you are done, leave to cool on a rack. slice up and spread with butter and topping of your choice mmmm
If you dont have Buttermilk then add 1 tablespoon of Lemon juice to the milk and stand fo 15 mins before warming
