Before I met my Belizean wife I had no idea about Belize and its food, I have known her for 18 years and during that time we have been back to Belize on numerous visits to her family and just to have a break. Belize is a small country population around 300,000, the largest concentration is where we live in Belize City, the whole country is basically a nature reserve with a wide diversity of animals and birds.
The coast is bordered by the second largest barrier reef in the world, and provides for spectacular diving and fishing .
You can drive in from the coast and down the hummingbird highway through Dangriga and stop off at Placencia or drive on to on to Toledo.
Or go north through Orange Walk and on to Mexico
at the top end of the reef there is San Pedro and Caye Caulker, very popular holiday destinations.
