Real Tacos are not the hard shell jobbies eaten in the states and the UK, they are soft and unctuous just soo tasty and easy to make.
Me and the Missus prefer a nice Pork Taco with a good bit of fat to enhance the taste.
To prepare the Pork take
- 500grms belly Pork
- 1 tablespoon ground cumin
- 2 tablespoons Red Recado/Achiote paste
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 Tablespoon Garlic Granules
- 1 large onion
- Water to cover meat
Rub the Pork with cumin, salt, pepper and garlic, dissolve Recado in some cider vinegar and rub it into the meat set aside in fridge for at least an hour. Fry the onion on low till nice and browned then add the meat and brown, add the water and simmer till fall apart tender. Reduce the liquid to make a juicy but not dry mixture, shred the Pork and set aside.
To make Corn Tortillas
- 2 cups Masa Harina
- 2 cups just boiled water
- pinch of salt
In a big mixing bowl mix up the masa and salt then add the water and stir with a wooden spoon till you get a dough not too dry or too sticky, adjust with masa or water till its the correct mixture form into a ball and cover, leave aside for at least an hour.
The best way to make the tortillas is with a Tortilla press, form the masa into balls about the size of a boiled egg yolk, so the Tortilla does not stick to the press use a large folded plastic bag, put the ball slightly towards the rear of the press then press down hard. Carefully remove the Tortilla from the plastic and cook in a dry fry pan for about 1 minute a side, till you get a few brown spots. Store the cooked Tortillas in a clean tea towel till ready.
To Assemble Tacos:-
Add some Pork to the Tortilla some grated White Cabbage and Chilli Sauce if you like them spicy.
You should get around 12 Tacos from this enjoy.
