Slow Cooked Shoulder of Lamb

Lamb is so expensive to buy a leg is a real treat coz its costs a packet, so why not try the cheaper cuts like shoulder, cooked slow its got fantastic flavor and fall apart tenderness. You will need a slow cooker a most essential piece of equipment in my kitchen, it allows you to create fantastic food with the minimum of effort.

you will need:-

a Joint of Lamb Shoulder (just pick a piece enough for you meal)

  • A Large Onion
  • A Head of Garlic
  • 2 Tablespoons Herbs du Provence
  • Salt and Pepper
  • 1 tsp Cumin seeds
  • Olive Oil
  • Good splash of Worcester Sauce

To create your meal:-

Rub your meat with Olive Oil and brown all sides in a HOT pan, Slice Onions and layer the bottom of your slow cooker, sprinkle over 1 table spoon of herbs and half the Garlic head split peeled and smashed.  Rub the Lamb with Salt, Pepper & Herbs then Pop the  Lamb on the Onions, sprinkle over the Cumin Seeds and pat into meat, cut several slits into Lamb and shove the other half of Garlic into meat, splash over the Worcester Sauce. Pour in 1 cup of water then slow cook on low for at least 6 hours it can go for up to 12 if you want.  Strain off the liquid to make some gravy I use some dissolved Masa Harina to thicken, Serve up with some Roast Potatoes and Veg of your choice. This is what I am cooking today for our Sunday Lunch.
