Nutty as a Fruit Cake

I love fruit cake and so do my customers it seems once I have baked a cake and popped it in the counter display it doesn’t take long for it to go.

My  quick and easy Fruit Cake

Preparation: 15 mins |Cooking: 1 hour

Serves: 8

225g self raising flour
110g butter
110g sugar
225g mixed fruit
75g cherries
1 egg
10 tablespoons milk
1 tablespoon mixed spice

Preparation method

1. Add butter, flour and sugar into a food processor blitz until it looks like fine breadcrumbs, put into a mixing bowl, add dried fruit and mixed spice.

2. Add egg and milk and stir in to make a soft dropping consistency, add more milk if needed.

3. Pour into lined 2 lb loaf tin Sprinkle demerara sugar over the top and pat down with the back of a spoon and bake for approximately 1 to 1 1/4 hours in a preheated oven at 180 C / 160 C fan / Gas 4 until a skewer comes out clean. leave to cool
