Chilli con Carne so simple to make but to get a great tasting Chilli takes a little care. So to make my Chilli Recipe here goes:-
You will need:-
- 1 kilo Pork/Beef mince
- 100 grms lard
- 2 large onions
- 2 tins chopped tomatoes
- 2 tins red kidney beans
- 6 tablespoons ground cumin
- 2 tablespoons garlic granules
- good slug of Worcester sauce
- 2 tablespoons season all
- 2 tablespoons ground ancho chilli
- 1 tablespoon new Mexican red chilli powder
- 1 tsp Habanero Chilli Powder
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 tablespoon locust bean or cocoa powder
- 2 tablespoons rubbed Mexican oregano
- 1 tablespoon of achiote powder or Achiote Paste
- 500ml chicken stock
Here is what you do with it
In a large pot (I use a large Caribbean Dutch pot) on a low heat melt the lard then brown the onions add salt at this stage helps the browning, when a nice colour remove from pan, add the meat and get some nice colour in it, now add back the onions and stir in all the herbs and spices and cook down on a low heat for a few minutes. Add the Worcester sauce and tomatoes give a good stir then give the beans a good shake open can then add to mix including the liquid. Stir in the stock and let it simmer on a low heat for a good 30 mins.
You can serve with crusty bread, rice or an a jacket spud. I always like to add some greatest cheese for a bit more taste.
I also do a Mexican Vaquero Pie just add the chilli to a Pyrex dish and then smother with an inch of mashed potato cover in grated cheddar and a good shake of paprika to brown it pop in the oven at say 180 till its nice and hot. then enjoy
