My Mistake but it did taste good.

When I first visited Belize with my lady my brother in law to be Stanley took me to see Altun Ha a Mayan temple just up the road from Belize City, Still impressive on the way back we popped in to to see Winston a friend of his at his little farm. His wife was cooking lunch and with usual Belizean hospitality we were invited to join them. It was Stew Chicken and Rice and Beans  which I love, also on the table she put some pots of orange puree, Now I thought this was some sauce to go with the Chicken so I spooned it on the plate and tucked in. Stanley looked at me strangely and said you realize that is Sweet Potato Pone and is your pudding, oops silly me but I have to say the sweet pone and stew chicken really went well together.

So here is how to make it.

Sweet Potato Pone


2 tablespoons rum
2 kilos sweet potatoes, peeled
3 packets Coconut Milk Powder
4 cups warm water
2 60grms Margarine
1 cup raisins, soaked
1/4 cup Cornmeal
1/4 cup flour
1 tablespoon nutmeg
1 tablespoon mixed spice
1 tablespoon vanilla extract
1 tablespoon cinnamon powder
1 teaspoon salt
500 grms dark sugar

Peel and Grate sweet potatoes and set aside.
Dissolve Coconut Milk Powder in warm water, melt the Margarine.
Mix the grated sweet potatoes, soaked raisins, Cornmeal, flour and dark sugar in a large bowl.

In another bowl,combine the Coconut Milk, melted Margarine, mixed spice ,vanilla, nutmeg, cinnamon powder, salt, and rum and mix well.

Add the liquid ingredients to the grated potato mixture and stir well.

Scrape the mixture in a greased flapjack or sandwich tin and Bake in a pre-heated oven at 180°C/ 350° F for 75 minutes.
