Luverly Corn Tortillas

A while ago when I was last in Belize I bought my self a Tortilla Press at Mr Quans shop in Queens Street, Belize City.

I have been meaning to try it out for some time and have played around with different  recipes so I can get a consistent mix, Very important for me as I run TKsnax a small diner in Gosport Hampshire and it needs to be right.

So after a few dry old Tortillas I have found a recipe that seems to fit the bill.

2 Cups of Masa Harina  (Corn Flour for Tamales and Tortillas)

1.5 Cups of tepid water

Pinch of salt

1.5 tablespoons of Veg Oil

Mix it all together and knead until you get a smooth dough if its too sticky add a bit more flour or too dry a small amount of water till its not too dry or wet. Wrap in cling film and pop into fridge for 10 mins .

When ready to cook pinch off a piece about 25cm round roll into a ball and using the Tortilla press and some cling film to stop it sticking flatten out turn and flatten again. You should end up with a Tortilla about 15cm and 3 mm thick.

Heat up a griddle or large frying pan and dry fry for about 3 mins on one side, flip and cook the other side for about 30 seconds. wrap in a clean T towel to stay warm and serve with a filling of your choice this will make Tacos that taste outstanding.
