Lemon Polenta Cake

If you love Cake but unlucky enough to be Gluten Intolerant this is the cake for you. Easy to make really tasty and Gluten FREE!!!!

Polenta Cake
A slice of lemon Polenta cake


  •  Butter 250 g
  • Caster Sugar 225 g
  • Polenta 350 g
  • Lemon Fresh x 2
  • Egg Large x 3
  • Salt1 tsp
  • Baking Powder (Gluten Free)
  • 1 tsp Lemon Essence


Preheat the oven to 180C. Grease or Line a Bread tin well.
Beat together the butter and sugar until light and fluffy. Beat in the eggs one by one. Fold in the zest and juice of the 2  lemons, Polenta, baking powder and salt. Whisk up with a hand held mixer then Pour into the tin and bake for 40-50 minutes until golden brown and skewer comes out clean.

Turn out on to a wire rack to cool when cool hide it coz if the rest of the family find it its gorn.
