Guyanese Style Pepper Pot

Pepper Pot is mouth wateringly tasty, slow cooked Beef in a really flavorsome sauce. Just right for a cold winters night. True Pepper Pot is made with Cassareep a sweet sticky sauce made from boiling the juice of Cassava root until a sticky sauce is produced. Cassava is poisonous and must be boiled to neutralise it. It can be purchased in bottles imported from Guyana but it is expensive so I am using  cheat method to mimic the Cassareep.

Recipe for 8 portions:-

  • 1KG diced Beef brisket or top rump
  • 1 Onion sliced
  • 1 tsp ground Cinnamon
  • 2 tsp Chipotle Chili Powder
  • 1/4 cup Brown sugar
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp ground cloves
  • 1/4 cup cider vinegar
  • 1 tbls Molasses
  • 1 tbls lime juice
  • 1 can chopped tomato
  • 1 tsp black pepper
  • 1 tsp ground ginger
  • 1 tin Butterbeans
  • 6 cups water

Brown onion and beef in a large dutch pot, meanwhile make up the cassareep. Take the Molasses and dissolve in Lime Juice and Vinegar and add in the herbs and spices stir until a smooth sauce is produced. Stir Cassareep into the meat and onions mix well then add the tomatoes, Beans and water bring top boil then simmer for around 3 hours or until meat is fall apart tender.

Serve it up with Rice and Beans and Fried Plantain.
