Easter Bickys

I love a spicy Easter Biscuit crisp and full of warming sweet spices mmmmm.

Heat Your oven to 200c or 180c fan

You will need:-

  • 100g o caster sugar
  • 1 Medium egg
  • ½ tsp baking powder
  • 80g currants
  • 100g soft butter
  • 250g plain flour
  • 2 tbsp milk
  • 1 tablespoon sweet mixed spice
  • Cinamon Sugar or some Golden Granulated Sugar

Using hand whisk beat the Sugar and Butter until fluffy, add the Egg and beat till combined, add the Flour, Baking powder and mixed spice, now add the milk and mix until you have a roll-able dough, once acheaved mix in the fruit. On a floured surface roll out to about 5mm thick. On a baking tray cover with baking paper cut out your bickys to the size you want 3 or 4 inch will be fine. Then pop into your warm oven for around 10 to 12 mins until the edges start to brown. Remove and sprinkle with cinnamon sugar.
