Dukunus a tasty snack from Belize in Central America basically they are Mash Up Sweet Corn mixed with Coconut Milk and Butter  served plain or filled with a spicy filling of Pork, Chicken or Beans. one of the first things I look for when visiting Belize.


  • 4 Large Cans of Sweet Corn
    1 Tsp Salt
    1 Tsp Black Pepper
    .5 cup of melted Butter
    1 Tsp Baking Powder
    1 can Coconut Milk
    6  Cups Maize Meal (Polenta)
  • Some soaked Corn Husks
  • Filling of your choice

Drain then empty the corn into a food processor and blitz until a nice paste is formed, then add the rest of the ingredients and mix well. If you want the vegetarian Version then form into a sausage shape wrap in Corn Husk then cover tightly with foil. Steam the Dukunu for around an hour till firm.

If you prefer a filled version lay the corn husk on a worktop spread the paste over then pop in about a tablespoon of filling wrap up and cover tight with foil then steam as per the Veggie version.
