Dits Coconut Tart

When ever I go to Belize one of the places you are sure to find me is Dits a small cafe with really tasty food. The Meat Pies are great fantastic Tamales and Coconut Tart to die for. Here is my approximation close and still a great eat.

Coconut Tart

Ingredients:

Filling:
2 Cups Desiccated Coconut
1/2 can condensed milk
1/2 nutmeg grated
2 tbsp vanilla essence
2 tsp sugar

Pastry:
2 cups flour
1/2 lb shortening
Cold water

Method :
Combine flour,shortening and crumble with fingers til like breadcrumb. Add water a little at a time to make dough. Grease muffin tin and line with dough.

Put grated coconut in a bowl and add condensed milk along with nutmeg, vanilla

Mix well put one tablespoon of filling in each lined muffin tin.
Bake for 15 to 20 minutes at 200c or 400f

Eat up and enjoy
