Cinnamon Muffins light and tasty and really easy to make.
- 2 cups all-purpose flour
- 1 cup sugar
- 4 tsp baking powder
- 2 tablespoons cinnamon powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup veg oil
- 2 eggs
- 2 tablespoons sugar
- 2 tsp cinnamon
Turn on your oven and get the temperature up to 375F (200c). Put all the dry ingredients into a mixing bowl and really combine well, in another bowl beat the eggs then add milk and oil and combine well, make a well in the dry and add the wet. combine until all the dry is moist and a smooth batter is achieved. prepare a 12 hole muffin tin, I find it easier to use paper muffin cups. Pour all the batter into a glass mixing jug and fill the muffin cases.
Mix the 2 tablespoons of sugar with the 2 teaspoons of sugar and sprinkle over the top of the batter and cook for around 15 mins check with a skewer if its clean then they are done.
Put to one side to cool down lock the kitchen door put on some coffee and enjoy mmmmm.
Ginger Muffins:- all as above but exchange the Cinnamon for 1 tablespoon ginger powder and about an inch of finely grated root ginger.
Lime and Coconut Muffins:- as above but add 1 tablespoon of Lime juice and grated zest of the Limes used to juice. Sprinkle the tops of batter with grated or desiccated coconut and cook.
