Fry Jacks a really tasty Belizean treat for breakfast, Really tasty but not to good for the waistline, serve them up with your Bacon, Eggs and some nice Re Fried Beans mmmmm.
- 2 Cups Self Raising Flour
- 1 Tablespoon Baking Powder
- 1 Tablespoon Coconut Oil
- 1 Tsp Salt
- about 3/4 cup Water
- Veg Oil for cooking
Add Flour, Salt and Baking Powder to your Food Processor and pulse 4 times then add water slowly until a nice soft dough is formed.
Split the dough into 2 balls and set aside to rest for 20 mins.
Now on a floured top roll each ball to about a 10 inch circle then cut into 4 put two slits in each piece.
Heat some oil in your fry pan till nice and hot then fry each Jack on either side till puffed and golden brown.
Serve up immediately with your breakfast.
